When thinking about sweets to eat on Christmas day , panettone and pandoro immediately come to mind, which have always been part of Italian tradition.

Panettone has been part of Italian tradition since the 1400s, and it's said to have been created specifically for a Christmas lunch. According to one of the stories surrounding panettone, Ludovico il Moro's cook was tasked with preparing a Christmas lunch, but forgot to put the cake in the oven, which burned to a crisp. A dishwasher, Toni, had already prepared something with what was left in the pantry—flour, butter, eggs, raisins, and citron zest—and suggested serving this dessert. This dish was a great success at the duke's table, and when asked what it was, the cook replied, "Toni's bread," meaning " panettone ."

Every year, when it's time for dessert on December 25th, panettone is served on Italian families' tables, an absolute must. Panettone is sometimes topped with custard, chocolate, or whipped cream, but it's almost never transformed into a different dessert.

After years of eating the same old panettone, wouldn't it be interesting to try a twist? Create something new from the traditional panettone for a different Christmas experience.

Instead of eating panettone as it is, let's try an easy, innovative recipe. This Christmas, we're making apple and panettone pudding! Get ready to transform this traditional Christmas dessert into something completely new.

This easy recipe can be prepared in under an hour and is a great way to try something new or even to reuse leftover panettone, because nothing goes to waste!

Ingredients:

  • 300g of panettone
  • 5 eggs
  • 1 lemon
  • butter as needed
  • icing sugar as needed
  • 100 g of sugar
  • 2 apples
  • 6.5 dl of whole milk
  • rum to taste

Procedure

This recipe is very easy to make. Once you've gathered all the ingredients, butter a baking dish and then cut the panettone into slices. Arrange them in the freshly buttered dish. Sprinkle the panettone slices with rum to moisten them just enough.

Now, combine the milk, eggs, and sugar in a blender and blend until smooth. Once everything is well blended and combined, grate the lemon zest and add it to the blender.

After this, peel the apples and cut them into slices. Once the apples are sliced, arrange the slices on top of the panettone slices in the baking dish. Then, pour the milk mixture we prepared earlier evenly into the baking dish.

Now it's time to bake. The oven should be set to 170°C and, after placing the baking dish with our mixture in it, bake for about 25-30 minutes.

Once the apple and panettone pudding is cooked, remove from the oven and dust with powdered sugar to taste. Now the pudding is ready to be served at your Christmas table and surprise your family with something new.

For an extra touch

To create a new variation of this recipe, you can replace the rum with Vin Santo or alternate different types of panettone, such as the almond one and the chocolate one.
