A Glass of Red Wine - Nannini Dolci e Caffè

In fact, when you think of Italian cuisine the first things that come to everyone's mind are the spaghetti , our long pasta made with durum wheat semolina and water, and the wine . When talking about typical Italian Sunday lunches, the first images that come to mind are many people around a table, intent on eating spaghetti and drinking wine.

But would you ever have thought of a different combination of these two elements? When you think of spaghetti and wine, have you ever imagined a recipe where the two elements are found in the same dish? Have you ever imagined savoring the combination of spaghetti and wine with a forkful?

It's never too late to try something new, that's why we offer you the recipe for spaghetti with red wine and bacon !

This time, wine won't be your accompaniment to your meal, but rather a side dish of spaghetti. This way, two elements of Italian culinary tradition come together to create something new and delicious, something you don't often get to eat.

It's time to grab a bottle of wine and a pack of spaghetti and try something new for your family and friends to enjoy.

Ingredients for the spaghetti with red wine and bacon :

  • 300g of spaghetti
  • 1 glass of red wine
  • 80g of pecorino cheese
  • 100 g of bacon
  • 1 chili pepper
  • 1 spring onion
  • oil as much as needed

Procedure

Once you've gathered all the ingredients for this recipe, the first step is to brown the pancetta in a non-stick pan until golden and crispy.

After cooking the pancetta, you need to filter its fat and store it in the refrigerator, so that it can later be used to stir into the spaghetti.

Now you need to chop half a spring onion, then put it in a pan with the chili pepper and half a tablespoon of oil, then fry everything over low heat.

Meanwhile, fill a pot with water and bring it to a boil, then add salt and cook the spaghetti.

After doing this, you need to add the red wine and some of the pasta cooking water, then let the sauce reduce for at least ten minutes.

When the water is boiling, throw in the spaghetti and let it cook.

When they are very al dente, you need to drain the pasta.

After doing this, add the spaghetti to the sauce in the pan and stir in the bacon fat, which we had previously refrigerated, and some pecorino cheese.

The last step before serving our dish of spaghetti with red wine and pancetta is to add the crispy pancetta we cooked earlier and a sprinkling of grated pecorino to our spaghetti.

Now you can bring your plate of spaghetti with red wine and bacon on the table and let your guests enjoy it.

For an extra touch

We recommend adding a drizzle of new oil once plated in order to give a light spicy note to the dish.
