Semifreddo with cantuccini and vin santo

The ingredients for the cantuccini and vin santo semifreddo are few and easy to find. You'll need:
- 400 g of whipping cream
- 120 g of sugar
- 2 eggs
- 200g Nannini Cantuccini
- 1 glass of Vin Santo Nannini
- 1 clove
- piece of cinnamon
- cornstarch (or cornstarch)
Procedure

This cantucci and vin santo semifreddo requires just a few steps and is quick and easy to make.
The first step is to whip the cream. To make this process easier, we recommend placing it in the freezer or refrigerator before whipping, so that it's cold when you work with it.
In the second step, you must separate the yolks from the whites, being careful not to let any yolks get into the egg whites. Once separated, beat the egg whites until stiff. A little trick to check if your egg whites are perfectly stiff: lift the bowl, and if the egg whites remain completely firm, you've succeeded and are ready for your recipe.
Then take the remaining egg yolks and combine them with the sugar. Beat them with a whisk until the mixture becomes pale.
Once the yolks are ready, add the egg whites and then the cream. Mix until smooth.
Now you'll take care of the cantuccini. Crush your biscuits into fine crumbs using a food processor or blender. Spread a layer of crushed cantuccini in an aluminum baking cup and drizzle with Vin Santo.
Now add a layer of cream, and on top of that, add another layer of crumbled cantuccini. Finish with a final layer of cream and a final sprinkling of cantuccini.
Then cover with aluminum foil and put it in the freezer.

Then create the garnish for your semifreddo with cantuccini and vin santo. To do this, toast some cantuccini crumbs in the oven. Meanwhile, create a sauce using the vin santo, adding 1 clove, a small piece of cinnamon, and thickening with a little cornstarch dissolved in cold water.
Finally, pour your sauce onto a plate, top with the semifreddo, and sprinkle with toasted cantuccini biscuits. Your cantuccini and Vin Santo semifreddo is ready to impress your guests.
